This Roasted Tomato Topper is a versatile garden-fresh recipe that can be made with seasonal vegetables and added to your favorite toasted bread or cracker.

Garden-fresh recipes are such a joy to make and eat! My husband and I start our own garden every spring and I love to make recipes with our home-grown veggies throughout the summer. 

This Garden Fresh Roasted Tomato Topper recipe is one that becomes a staple in our home once we get our harvest. 

There’s something so uniquely special about growing your own food and then creating fun, fresh (and healthy!) recipes with the bounty. Even if you don’t have a home garden, purchasing and using fresh seasonal vegetables year-round is better for you and can even support local farmers.

This is why our family s so passionate about growing our own vegetables. When you get berries in the dead of winter – as delicious as they may be – they are grown unnaturally, usually with post-harvest treatments like ripening agents, chemicals, gases, applied heating processes, and more.

However, produce that is in season is more likely to be fresh and therefore, higher in nutritional value. By choosing ingredients that are naturally in season, you are also more likely to get vegetables from local farms rather than produce that has been kept refrigerated for months and transported from country to country.

There are so many different ways you can use this roasted tomato topper. I love to make this as an easy spread to go on top of toasted sourdough bread with some mozzarella and fresh basil. That way, it combines all the flavors of a classic Caprese salad with the elevated freshness of other garden veggies.

In this recipe, I bake tomatoes, potatoes, garlic, olive oil, and salt and pepper (to taste) at 350º F for 30 minutes, and then again at 400º F until all the vegetables are nice and soft.

Then, I remove them from the oven and lightly smash them – and voila! You have a delicious Garden Gresh Roasted Tomato Topper that you can use on or with just about anything. Seriously, get creative!

This Garden Fresh Roasted Tomato Topper recipe is extremely beginner-friendly! It uses simple and fresh ingredients, and your oven does a lot of the work. It’s pretty much foolproof and versatile.

I also love it because you only need to use one baking dish. All you need to do is toss your vegetables in with the oil and garlic and bake! So whether you’re in a dorm room with just a toaster oven or you’re baking for a large group, you can make this work.

Plus, you can get creative with it in so many ways. For instance, you could add more fresh, seasonal vegetables to the tomatoes and potatoes. 

Although this is a recipe you want to try to eat right away to retain the freshness, you can definitely still store your roasted tomato topper in an airtight container and refrigerate it for a few days.

Garden Fresh Roasted Tomato Topper

  • 810 tomato
  • 2 cups potatos
  • 24 garlic cloves
  • 1 tbsp olive oil
  • Salt and pepper (to taste)


  1. Preheat the oven to 350º F.
  2. Add all your ingredients to a baking dish.
  3. Bake for 30 minutes, then increase the oven temperature to 400º F and bake until all the vegetables are nice and soft.
  4. Remove your vegetables from the oven and lightly smash them. 
  5. Top them on your favorite bread or cracker with some basil and mozzarella cheese.
